INTRODUCTION
Love… Passion… Obsession…Three words often used by those who love wonderful food, and who want to excel in the culinary arts and create an unforgettable experience for their customers. Success in this field can only be attained through immense interest, a continuous search for something new, and endless effort. To invent – to study – to travel – to continually learn: this is the motto of all great chefs. Their greatest satisfaction lies in seeing a restaurant full of guests, who come again and again to visit “their chef”. Every chef included in this book has received many awards on the world’s gastronomic battlegrounds and rank amongst the most elite of Czech chefs. Their efforts to appease even the most demanding customer never cease. It was a joy to work with them – to discuss and see the results of their creations. They are all driven by an engine that moves them forward and a desire to achieve perfection. I’m very happy to see this enormous interest in the future of gastronomy and overjoyed by their endless debates, not only about quality and ingredients, but also about the exacting customers for whom they so enjoy cooking. It’s quite clear that we don’t have to worry about this field, as it’s in good hands. We can only hope that these people, and others like them, will pass on their experiences and teach a love of the trade to any who are willing to listen. Never forget that good food is the best aphrodisiac. Welcome! Eva Filipová Author Eva Filipová is principally concerned in etiquette and manners. She wrote A Guide to Etiquette and the Excellent Menu. After 1991 she was one on the first who started successful courses for women. She studied at the International School of Aesthetics in New York. She is a member of the body of editors in Prestige magazine she has written many interesting reports from exotic countries. She is a co-authorof the Golden Cookbook. Her exceptional interest in gastronomy and knowledge of the environment led her to write this book. She adores the book of chefs and she considers their creations to be work of high art.
